Daniel’s Corn Salad
This is my recipe for a really nice Fresh Corn Salad! Perfect for your Fourth Of July celebration! It’s simple to make and as always it’s another of my “Grandma Style” recipes.
You’ll need:
- 6 ears of corn
- 1/2 cup red onion diced
- 2 very ripe plum tomatoes diced or 1 cup quartered grape tomatoes
- 1/2 cup chopped fresh basil
- 1 tbs extra virgin olive oil
- 1 tbs red wine vinegar
- 1 tbs fresh lemon juice
- 1 tsp salt
- 1 tsp fresh ground black pepper
Directions:
- In a large pot, boil the corn for 3-5 minutes then chill the corn down in cold water
- Once you can handle the corn, cut the kernels off the cobs and place in the bowl you are going to serve the salad in
- Add the balance of the ingredients and mix everything together
- Taste for salt n pepper
- Now, I only use a little dressing as I do not want to overpower all the flavors of the fresh ingredients
- Cover with plastic wrap and place in the fridge for a couple hours to chill and let all the flavors come together
- After you remove it from the fridge you can taste for salt, pepper and dressing and if you prefer add some more
