Chicken with Olives and Mushrooms
I got a mail to post this recipe. It’s very simple to make and takes place in one pan. BLOWING UP with flavor, it’s gonna be a keeper. You need:
Ingredients:
- 1-cut up chicken or the parts you like, about 2 lbs.
- 8- ounces baby Bella mushrooms sliced.
- 6-garlic cloves sliced.
- 1/4 cup thin sliced onions
- 1/2-cup white dry wine
- 1/2 cup chicken stock
- 1/2 cup green pitted olives sliced
- Olive oil
Directions:
- In a large skillet, put a tablespoon of oil and get it hot.
- Skin side down brown the chicken for about 6 minutes then flip and brown the other side.
- Remove the chicken and add the mushrooms, garlic, onions and olives and sauté for about 5 minutes.
- Add the white wine and bring to a boil and simmer for 2 minutes.
- Then add the chicken stock and all the chicken back to the skillet cover and simmer for about 20 minutes until the chicken is done. -Daniel Mancini
