Chicken, Spinach, White Bean Soup
Chicken, Spinach, White Bean Soup in minutes and made only with REAL ingredients.
I love soup and I love that I can have a delicious hot bowl of good soup not full of preservatives or tons of salt, in literally minutes.
You’ll need:
- 1-qt of chicken broth you can use a good quality store bought reduced sodium if you don’t have homemade.
- 1 can of prepared white beans
- Fresh baby spinach
- 1- tsp salt
- 1- tsp fresh black pepper
- 1/2 boneless skinless chicken breast
- A pinch of red pepper flakes (optional)
- Some fresh grated romano cheese
- Drizzle of extra virgin olive oil
Directions:
- In a sauce pan bring the broth, salt, black pepper and the chicken to a boil and reduce to a slow simmer, cover and let it go for 15 minutes.
- Remove the chicken and cover with foil.
- Add the beans and simmer uncovered for 10 minutes.
- Shred the chicken and add it back to the soup and simmer for 2 minutes.
- Turn off the heat and add the spinach and put the lid on the pot.
- Let it sit for 2 minutes then stir the spinach into the soup. It will wilt into
the soup without over cooking. Or do what I did here and add the spinach to the bowl and add the hot soup. I like my spinach a little under done. - Top with some grated cheese, red pepper and a drizzle of the extra virgin olive oil.
So really good soup in a few minutes made with REAL ingredients no preservatives or ingredients that you can’t identify. I used homemade chicken broth but there are some really good brands that are legit, I would use them.
