Chicken Scarpiello
My mouth is watering as I post this recipe! I love this recipe the flavors are INCREDIBLE!
You’ll need:
- 1.5-lb boneless skinless chicken thighs cut into small pieces
- 1-lb Italian sweet sausage cut into small pieces
- 1-cup flour
- 2-potatoes cut into small pieces
- 1-onion cut into small pieces
- 4- garlic cloves smashed
- 1-lemon quartered
- 2-sprigs of rosemary
- 1-16 ounce jar of Italian hot cherry peppers quartered with seeds and stems removed.
- 1-cup chicken stock
- 1/2 cup white wine
- Vinegar from the peppers
- Salt n pepper
- Olive oil
Directions:
- Dredge the chicken in the flour.
- In a large skillet add 1/4 cup olive oil and once it’s hot brown the sausage and chicken then remove it to a plate
- In the same skillet add the rosemary, potatoes, onion, garlic and peppers, salt n pepper and sauté this till the potatoes brown
- Add the chicken, sausage back to the skillet with the vinegar from the pepper jar, squeeze the lemon wedges and add the lemons, chicken stock, wine mix this all together
- Cover and simmer on a medium heat for 10 minutes
