Chicken Marbella

Chicken Marbella

Not sure what to say about this recipe other than it’s an amazing dish made with simple ingredients and probably something you haven’t thought about making in a long time. Oh, it’s also delicious.

You’ll need:

  • 1-4 to 5 lb chicken cut into 8 pieces
  • 8 cloves of garlic minced
  • 2 tbs dried oregano
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 cup pitted prunes
  • 1/2 cup Spanish green olives
  • 1/4 cup capers
  • 1-tbs caper juice
  • 4-bay leaves
  • 3/4 cup brown sugar
  • 1-cup white wine
  • 3-tbs fresh parsley chopped 
  • Salt
  • Black cracked Pepper

Directions:

  1. In a large zip lock bag add the garlic, oregano, 1-tsp salt and 1/4 pepper, vinegar, olive oil, prunes, olives, capers, caper juice, bay leaves.
  2. Add the chicken and place in the fridge for 24 hours.
  3. Preheat the oven to 350°F.
  4. Place the chicken in a baking dish and add the marinade all over the chicken as evenly as possible.
  5. Spread the brown sugar all over the chicken pieces and pour the white wine around the chicken
  6. Bake in a 400 degree pre heated oven for 10 min. Then lower the temperature to 350 degrees.
  7. Baste the Chicken after the first 20 minutes of baking then every 15 minutes till done.

I use a thermometer to check to see when it’s done.
