Chicken Marbella
Not sure what to say about this recipe other than it’s an amazing dish made with simple ingredients and probably something you haven’t thought about making in a long time. Oh, it’s also delicious.
You’ll need:
- 1-4 to 5 lb chicken cut into 8 pieces
- 8 cloves of garlic minced
- 2 tbs dried oregano
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1 cup pitted prunes
- 1/2 cup Spanish green olives
- 1/4 cup capers
- 1-tbs caper juice
- 4-bay leaves
- 3/4 cup brown sugar
- 1-cup white wine
- 3-tbs fresh parsley chopped
- Salt
- Black cracked Pepper
Directions:
- In a large zip lock bag add the garlic, oregano, 1-tsp salt and 1/4 pepper, vinegar, olive oil, prunes, olives, capers, caper juice, bay leaves.
- Add the chicken and place in the fridge for 24 hours.
- Preheat the oven to 350°F.
- Place the chicken in a baking dish and add the marinade all over the chicken as evenly as possible.
- Spread the brown sugar all over the chicken pieces and pour the white wine around the chicken
- Bake in a 400 degree pre heated oven for 10 min. Then lower the temperature to 350 degrees.
- Baste the Chicken after the first 20 minutes of baking then every 15 minutes till done.
I use a thermometer to check to see when it’s done.
