Bucatini Pasta with Broccoli di Rabe and Bacon
Tonight’s pasta recipe is one of my favorites for 3 reasons.
#1- my favorite pasta cut, Bucatini
#2- one of my favorites vegetables, broccoli di rabe
#3- BACON!
You’ll need:
- 1 lb of bucatini or perciatelli pasta cooked 2-min short of al dente.
- 1/3 cup olive oil
- 1 bunch of broccoli di rabe
- 4 garlic cloves sliced
- 4-5 thick slices of bacon cut into small pieces
- 1 cup of pasta water
- 1 tsp red pepper flakes
- Grated romano or parmesan cheese
Directions:
- In a large pot of salted water boil the rabe for 5-minutes
- Remove the rabe,chop into small pieces and leave on a plate and keep the water boiling for the pasta
- In a large skillet add the the bacon pieces and cook till done
- Add the garlic and crushed red pepper and sauté for for 2 minutes
- Now add the olive oil and once hot add the prepared broccoli di rabe and sauté this together for a minute
- Turn off the heat on the skillet
- Cook your pasta 2- minutes short of recommended time, reserve 1-cup of the pasta water and strain the pasta
- Add the pasta and the cup of pasta water to the skillet and turn the heat up to med/high
- Once this begins to bubble sauté this all together folding the pasta I to the sauce for 2 minutes
- Turn off the heat and top with grated cheese
- Serve immediately
