Broccoli di Rabe with Sausage and Pasta
- 1 bunch of broccoli di rabe
- 1/4 cup extra virgin olive oil + 1 tbs
- 8 garlic cloves sliced thin
- 2 tsp Crushed red pepper flakes
- 1/4 cup Grated pecorino Romano cheese + more for serving
- Salt n pepper to taste
- Pasta of your choice
- 1 lb italian sweet sausage removed from casing
Directions:
- Cut the bottom 1″ of the stems off the broccoli di rabe and put the broccoli di rabe in a large pot of boiling water for about 5 minutes (keep this pot of water going for your pasta) remove and immediately rinse the rabe under cold water this will stop the cooking and lock in the color.
- Chop into bite size pieces and set aside.
- In a large skillet on medium heat put the 1 tbs olive oil and add the sausage meat and with a wooden spoon sauté and break apart the sausage into small pieces as you brown it.
- Now add 1/4 cup oil, garlic, crushed red pepper flakes, salt n pepper to taste (I use 1 tsp of each). Once you start to smell the garlic sauté all this for 5 minutes.
- Now add the broccoli di rabe to the skillet and sauté for 5 minutes.
- When you added the broccoli di rabe to the skillet start cooking your pasta in the pot of boiling water to 2 minutes short of recommended time, reserve one cup of the pasta water and strain the pasta and add it to the skillet.
- Turn heat to medium high on the skillet add the cup of pasta water and sauté this all together for 2 minutes.
- Turn off the heat and add the 1/4 cup Romano and fold everything together.
- Serve with a good drizzle of the Extra virgin olive oil and grated cheese.
