Beef Stew Pot Pie from Noble Pies

Beef Stew Pot PieAs promised here is an incredible recipe from Leslie Noble the owner of Noble Pies,

I really appreciate Leslie sharing this recipe for her amazing Beef Stew Pot Pie with all of us, it’s a big deal. It is a keeper and delicious like everything she bakes.

Ingredients for seasoning meat:

  • 1 tsp thyme
  • 1 tsp marjoram
  • 1 tsp oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup all-purpose flour
  • Crust is a basic pot pie crust (Leslie wasn’t giving up this secret, I don’t blame her)


Ingredients for stew:

  • 2 pounds beef stew meat, cut into 1 inch cubes
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 rib celery, chopped
  • 4 garlic cloves, chopped
  • 3 potatoes cut into 1 inch cubes
  • 1 tsp thyme
  • 1 tsp marjoram
  • 1 tsp oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • 2-3 cups beef or chicken stock 
  • 2 TBS butter, softened
  • 2 TBS flour

 

Directions:

  1. Dredge meat in flour/seasoning
  2. In a heavy skillet add 2 TBS vegetable oil brown the meat in batches, turning often.
  3. Move meat to a large pot add vegetables, stock and seasonings cover and bring to a boil turn heat down and simmer for 1-1/2 to 2 hours.
  4. Knead together softened butter and flour whisk into stew until thickened.
  5. You will need a double pie crust for a 9” pie. Place pie crust in a 9” pie plate. Fill with Beef Stew filling. Place top crust on top of filling and crimp the edges. Brush with an egg wash if desired and bake at 375 degrees for 30-40 minutes. 

One pie makes approximately 5 servings.
