Authentic Pork Ragu

Authentic Pork RaguThis sauce takes some time to make but when it’s done you will love it. Not to mention as it cooks your home is gonna have that “Grandma is cooking” aroma.

 

You’ll need:

  • 3 pounds meaty pork ribs
  • 2 tbs olive oil
  • 1 cup chopped onion
  • 6 garlic cloves chopped
  • 2 bay leaves
  • 2 tbs tomato paste
  • 1 28 oz can whole Italian plum tomatoes crushed by hand
  • 2 cups chicken stock
  • 1/2 cup of a dry red wine
  • 2 sprigs of rosemary
  • Salt & pepper

 

Directions:

  1. Sprinkle a good amount of salt n pepper on the ribs
  2. Heat the oil in a dutch oven or heavy pot
  3. Add the ribs and brown on all sides over a med/high heat
  4. Remove to a plate
  5. Add the onion and garlic and cook for 10 minutes or until golden brown
  6. Add tomato paste and while constantly stirring cook for 10 minutes
  7. Now add the wine and de-glaze the pot with a wooden spoon scraping all the brown bits into the liquid
  8. Allow this to reduce by half about 10 minutes
  9. Add tomatoes and all the juice, rosemary, bay leaves and chicken stock
  10. Stir and bring to a boil
  11. Add the ribs and any juice that is on the plate
  12. Using a tong push the ribs under the sauce
  13. Season with some salt n pepper
  14. Cover and on a low simmer allow this to cook for 3 hours
  15. Stir a couple times an hour
  16. After 2 hours check for salt n pepper and adjust if needed
  17. After 3 hours remove the ribs, the meat should be falling off the bones
  18. Remove any meat from the sauce and shred the meat with a forks and add back to the sauce
  19. Remove the bay leaves and any rosemary
  20. Remove the lid and simmer for 15 minutes to further thicken the sauce

 

This sauce is a long process but in the end it’s worth the time.
