Mama Mancini’s and Daniel Mancini have been featured in today’s Tennessee newspaper Chattanooga Times Free Press, as well as it’s as well as its online counterpart TimesFreePress.com in an article titled, “Side Orders: Try making a creamy risotto as either an entrée or a side dish” in the Life Entertainment section. Credited as “Daniel Mancini, Italian cooking expert and co-founder of Mama Mancini’s meatballs,” Dan’s tips and tricks for cooking risotto are highlighted throughout the article such as the biggest mistakes you can make, the best ingredients make all the difference, and most importantly to keep trying until you get it right. Dan also made sure to mention that risotto can be served as a side with anything from chicken, to fish, to beef, “even meatballs simmered in a slow-cooked sauce.” Furthermore, the article includes Dan’s Mushroom and Shallot Risotto recipe.
