Stuffed Eggplant

I love eggplant and I am in love with stuffed eggplant. This is an easy recipe, and the ingredients are available in every market. Like I say, simple ingredients make real food.

You’ll need:

  • 1/2 cup minced onion
  • 4-garlic cloves minced
  • 1/2 lb ground beef
  • 1/2 lb italian sweet sausage meat
  • 1-Eggplant cut in half, the inside scraped out and reserved. Chop the eggplant that has been scraped out.
  • 1-red bell pepper minced
  • olive oil
  • Salt
  • Pepper
  • 1/2 cup red wine 
  • 1/2 cup chopped parsley
  • 1-10oz. can of diced tomatoes 
  • 1/2 cup grated Romano cheese

Directions:

  1. Heat 2 tbs olive oil in a skillet and sauté the onion, garlic, red pepper, chopped eggplant meat, 1-tsp salt and 1/2-tsp pepper.
  2. After 5 minutes add the ground beef and sausage and brown.
  3. Add the wine and continue cooking until it hasreduced by half
  4. Add the tomatoes and their juice
  5. Cook for 15 minutes on a medium heat, stirring along the way.
  6. Remove from the heat and allow this to cool
  7. Fold in the Romano cheese.
  8. Season the eggplant with salt and pepper and
  9. Drizzle some olive on them
  10. Fill the eggplants with the filling
  11. Place the eggplants on a baking sheet, cover loosely with foil and bake in a 400 degree oven for 30 minutes

I serve with a drizzle of olive oil and a sprinkle of Romano. A salad is great but really this eggplant is a meal in itself.
