Brooklyn Italianese String Bean

String BeansWow, I love this recipe! I think this is as rustic Italian as it gets. This dish can be served hot or room temperature. Just before you serve the string beans, drizzle with a little extra virgin olive oil.

You’ll need:

  • 1-lb string beans cleaned and cut in half
  • 2-tbs cup extra virgin olive oil
  • 1 28-ounce can of whole Italian plum tomatoes crushed by had, San Marzano if you can get them. 
  • 6-8 garlic cloves, sliced
  • salt
  • 1/2 tsp crushed red pepper flakes

Directions:

  1. Blanch the beans in a pot of boiling water for 2 minutes, drain and set aside.
  2. In a large skillet add the olive oil, garlic and red pepper flakes. Allow this to sauté for 2 minutes.
  3. Add the crushed tomatoes, salt and bring to a boil. Continue to cook for 10 minutes.
  4. Add the beans and toss everything together.
  5. Cook the beans in the tomatoes for 10 minutes while tossing everything together.
  6. Serve.

If you like well done beans then just keep cooking them in the sauce.
