Escarole and Garlic

You’ll need:

  • 1 head of Escarole
  • 2 tbs Olive oil
  • 4-6 cloves of Garlic, cut in half
  • Salt
  • Crushed Pepper

Directions:

  1. Wash, chop, and dry the escarole. It’s very important that it’s completely dry or it will steam.
  2. Add the olive oil to a skillet with the garlic. If you like it spicy you can add crushed pepper.
  3. Slowly heat the garlic in the oil so it flavors the olive oil.
  4. Once you can smell the sweet garlic smell and it’s a golden brown color, add the escarole and some salt.
  5. Put the heat to high and sauté the escarole, making sure it’s coated in the oil.
  6. It will cook very quickly- just a couple of minutes. You will see it wilt.
  7. Remove and serve immediately.
