Escarole and Garlic
It’s so delicious and so simple to make.
You’ll need:
- 1 head of Escarole
- 2 tbs Olive oil
- 4-6 cloves of Garlic, cut in half
- Salt
- Crushed Pepper
Directions:
- Wash, chop, and dry the escarole. It’s very important that it’s completely dry or it will steam.
- Add the olive oil to a skillet with the garlic. If you like it spicy you can add crushed pepper.
- Slowly heat the garlic in the oil so it flavors the olive oil.
- Once you can smell the sweet garlic smell and it’s a golden brown color, add the escarole and some salt.
- Put the heat to high and sauté the escarole, making sure it’s coated in the oil.
- It will cook very quickly- just a couple of minutes. You will see it wilt.
- Remove and serve immediately.
