My Italian Mac ‘n Cheese
This is the best Mac n Cheese I have ever had, period! It’s so easy to make and this recipe makes a huge portion!
You’ll need:
Cheese Sauce ingredients-
- 5-cups of half-n-half
- 1-cup heavy cream
- 5-tbs flour
- 8-tbs butter
- 6-ounces of bacon cooked, drained on paper towels and crumbled
- 1/4-cup chopped parsley
- 1/4-cup minced onion
- 1-garlic clove minced
- 4-oz. grated Parmesan cheese
- 4-oz. grated Asiago cheese
- 8-oz. shredded fontina cheese
- 8-oz. shredded provolone cheese
- 1/2-cup of pasta water
Topping ingredients-
- 2-cup of fresh made bread crumbs or store bought
- 1/4-cup grated Romano cheese
- 5-ounces melted butter
- 1/4-cup chopped parsley
- 2-ounces of crumbled bacon prepared as above
- 1/2-tsp salt
- 1/4-tsp pepper
Macaroni-
- 1-lb macaroni cooked 3 min short of recommended time.
- Don’t forget to reserve the 1/2 cup of pasta water!
Directions:
- Melt the butter in a large heavy pot and add the onion, garlic, salt and pepper and sauté for 5
minutes. - Add the flower and whisk for 2-3 minutes to make the roux.
- Add the cream, half n half and stir until this comes to a boil.
- Lower to simmer and stir in all the cheese.
- Stir until it all melts while adding the 1/2 cup of pasta water.
- Stir in the parsley and bacon.
- Add the cooked macaroni.
- Stir this all together.
- Pour this into a large buttered baking dish 9″x13″.
- Spread the topping on top.
- Bake in a pre heated 400 degree oven for 20-30 minutes. You’ll see the cheese bubbling.
- Remove the Mac n cheese from the oven and let it sit for a couple minutes before serving.
You can also bake this into smaller portion size baking dishes, just adjust the baking time.
