Chicken, Spinach, White Bean Soup

I love soup and I love that I can have a delicious hot bowl of good soup not full of preservatives or tons of salt, in literally minutes.

 

You’ll need:

  • 1-qt of chicken broth you can use a good quality store bought reduced sodium if you don’t have homemade.
  • 1 can of prepared white beans
  • Fresh baby spinach
  • 1- tsp salt
  • 1- tsp fresh black pepper
  • 1/2 boneless skinless chicken breast
  • A pinch of red pepper flakes (optional)
  • Some fresh grated romano cheese
  • Drizzle of extra virgin olive oil

Directions:

  1. In a sauce pan bring the broth, salt, black pepper and the chicken to a boil and reduce to a slow simmer, cover and let it go for 15 minutes.
  2. Remove the chicken and cover with foil.
  3. Add the beans and simmer uncovered for 10 minutes.
  4. Shred the chicken and add it back to the soup and simmer for 2 minutes.
  5. Turn off the heat and add the spinach and put the lid on the pot.
  6. Let it sit for 2 minutes then stir the spinach into the soup. It will wilt into
    the soup without over cooking. Or do what I did here and add the spinach to the bowl and add the hot soup. I like my spinach a little under done.
  7. Top with some grated cheese, red pepper and a drizzle of the extra virgin olive oil.

So really good soup in a few minutes made with REAL ingredients no preservatives or ingredients that you can’t identify. I used homemade chicken broth but there are some really good brands that are legit, I would use them.
