Chicken Scarpiello 

I am crazy for this recipe!!! I make this in big batches 11659411_10153544250904891_3366385392236003364_nand I freeze some. And the day after you make it, it will be even better!

You’ll need:

  • •2-lb boneless skinless chicken thighs cut into small pieces
  • 1-lb Italian sweet sausage cut into small pieces
  • 1-cup flour
  • 2-potatoes cut into small pieces
  • 1-onion cut into small pieces
  • 4- garlic cloves smashed
  • 1-lemon quartered
  • 2-sprigs of rosemary
  • 1-16 ounce jar of Italian hot cherry peppers, quartered with seeds and stems removed
  • 1-cup chicken stock
  • 1/2 cup white wine
  • Vinegar from the peppers
  • Salt and pepper
  • Olive oil

Directions:

  1. Dredge the chicken in the flour.
  2. In a large skillet add 1/4 cup olive oil and once it’s hot brown the sausage and chicken then remove it to a plate.
  3. In the same skillet add the rosemary, potatoes, onion, garlic and peppers, salt n pepper and sauté this till the potatoes brown.
  4. Add the chicken, sausage back to the skillet with the vinegar from the pepper jar, squeeze the lemon wedges and add the lemons, chicken stock, wine mix this all together and cover and simmer on a medium heat for 10 minutes.

Ooooooooffff this is an incredible dish!!!!!
