Roasted Vegetable Pasta Salad

This is my recipe for a simple roasted vegetable pasta salad. I love this recipe and it’s so easy to make and can be made ahead of time or served immediately. This is perfect for any occasion! I am using brussel sprouts for my vegetable but you can use any vegetable or vegetables you love.

You’ll need:

  • 1/2 lb pasta
  • 1/2 onion chopped thick
  • 2 cups of brussel sprouts quartered
  • 5 garlic cloves quartered
  • Extra virgin Olive oil
  • Salt
  • Pepper
  • 2 tbs chopped Fresh Tarragon (only because I had it, use any herb you prefer, fresh or dried)
  • 1/4 cup Grated Romano Cheese

Directions:

  1. Fully cook your pasta then strain and place into a cold water bath to stop the cooking
  2. Once cool, remove it and place in a bowl
  3. Add 1/4 cup of extra virgin olive oil, whatever herb you are using, mix, cover and place in the fridge
  4. Preheat your oven to 400 degrees
  5. Mix the brussel sprouts, onion, garlic in a bowl with 1 tbs of the olive oil
  6. Add salt n pepper to taste
  7. Spread this out onto a baking sheet and place into the oven for 15 min, toss and continue to roast till done, 15 min more
  8. Remove this from the oven and allow it to cool down
  9. Once cool toss into the pasta with the grated cheese
  10. Taste for salt n pepper, cheese and adjust. You may need more oil, add if needed

You can use any roasted vegetable you would like, they all work well with this salad.
