Broccoli di Rabe

Broccoli di RabeLove this vegetable and I use it many ways. Here is simple and delicious way to enjoy it. It is a bitter vegetable and if that bugs you then boil it in salted water for 2-3 minutes first. That will remove most of the bitterness.

 

You’ll need:

  • 1-large bunch broccoli di rabe bottom tough stems chopped off
  • 1/4 cup olive oil
  • 6-garlic cloves sliced
  • 1-tsp salt
  • 1/2-tsp red pepper flakes
  • 1/2 cup chicken stock or water

 

Directions:

  1. Wash the broccoli di rabe.
  2. Take a large pot and add the olive oil, garlic, red pepper flakes and put the heat on med.
  3. Once the garlic is a light brown add the broccoli di rabe, salt and sauté for 2 min on a high heat.
  4. After the 2 minutes add the stock or water and cover the pot. Turn the heat to medium/high.
  5. 2 minutes check to see if the rabe is done (I like mine on the under done side but if you like it well done let it steam a little longer).
  6. You can toss this with pasta and always adding some grated Romano or Parmesan cheese is a great idea.
