Broccoli di Rabe
Love this vegetable and I use it many ways. Here is simple and delicious way to enjoy it. It is a bitter vegetable and if that bugs you then boil it in salted water for 2-3 minutes first. That will remove most of the bitterness.
You’ll need:
- 1-large bunch broccoli di rabe bottom tough stems chopped off
- 1/4 cup olive oil
- 6-garlic cloves sliced
- 1-tsp salt
- 1/2-tsp red pepper flakes
- 1/2 cup chicken stock or water
Directions:
- Wash the broccoli di rabe.
- Take a large pot and add the olive oil, garlic, red pepper flakes and put the heat on med.
- Once the garlic is a light brown add the broccoli di rabe, salt and sauté for 2 min on a high heat.
- After the 2 minutes add the stock or water and cover the pot. Turn the heat to medium/high.
- 2 minutes check to see if the rabe is done (I like mine on the under done side but if you like it well done let it steam a little longer).
- You can toss this with pasta and always adding some grated Romano or Parmesan cheese is a great idea.
