Zucchini Sautéd with Onions and Garlic
The Garden is overflowing with Zucchini and so is the supermarket so here is a simple recipe to put them to good use. You could toss this with pasta and scramble with eggs. But I am enjoying it just the way it is.
You’ll need:
- 2-3 Zucchini cut into half moon shaped pieces
- 4 Garlic cloves sliced
- 1 Onion sliced
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 tbs Olive oil
Directions:
- Heat a skillet to hot and add the olive oil, onion, garlic, salt n pepper
- Sauté for 2-3 minutes
- Add the zucchini and toss to coat with the oil
- Allow this cook till the zucchini is cooked through
- I like mine on the well done side
- Taste for salt n pepper and adjust
