Grilled Eggplant n Meatballs On A Bun

Grilled Eggplant n Meatballs On A BunI got a lot of requests for this recipe since I showed it on QVC this week. It’s easy to make and it’s even easier if you have my Mama Mancini meatballs n sauce.

 

You’ll need:

  • 1 eggplant cut into 1/2″ rings
  • Olive oil
  • Ricotta cheese
  • Shredded or sliced mozzarella cheese
  • Heated meatballs n sauce
  • Grated Romano cheese or Parmesan
  • Salt n pepper
  • Chopped fresh basil (optional)

 

Directions:

  1. Brush both sides of the eggplant slices with the olive oil and sprinkle some salt n pepper on them
  2. Place them on a hot grill
  3. After 5 minutes flip them, the underside should be done
  4. On the grilled side place some sliced heated meatballs n sauce, a scoop of ricotta cheese, mozzarella cheese and close the BBQ lid
  5. After about 5 minutes check to be sure they are done, they should be (if not let them go for a couple more minutes)
  6. When done, remove the eggplant meatball parm to either a plate to enjoy or on a bun
  7. Top with more hot sauce, drizzle of olive oil and some grated cheese and if you have the basil add some
