Grandma’s Mac n Cheese

Grandma's Mac n CheeseWho doesn’t love a good Mac n Cheese? This recipe is not only easy to make, I am telling you, it’s gonna make Dad and everyone else very happy!

 

You’ll need:

  • 2 cups milk
  • 2 cups of heavy cream
  • 8 tbs butter
  • 1/2 cup minced onion
  • 1/2 cup all-purpose flour
  • 2 tsp salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 cups shredded extra sharp cheddar cheese
  • 1 cup grated pecorino romano cheese
  • 1 lb elbow macaroni
  • 1 cup bread crumbs (topping)
  • 1 tbs melted butter (topping)
  • 1/2 cup romano cheese (topping)

 

Directions:

Topping (optional) is 1 cup of bread crumbs mixed with 1/2 cup of Romano cheese and 1 tbs of melted butter, mix this all together and set aside.

  1. Heat the milk and cream in a saucepan over medium heat until it begins to boil then turn off heat add the salt and cover
  2. In a large saucepan, melt the butter over medium heat add the minced onion
  3. Sauté for 2 minutes then slowly whisk in the flour adjusting heat to a very low heat for 3-5 minutes or until this turns to a light golden brown color
  4. Now slowly add the hot milk to the flour mixture while whisking it constantly until fully mixed together
  5. Return the saucepan to a medium heat and whisking constantly for 2-3 minutes until the sauce becomes thick enough to coat the back of a spoon
  6. Now lower the heat to low and slowly add all the cheese until the cheese is fully melted
  7. Prepare the pasta 2 minutes short of recommended time, strain and remove as much water as possible
  8. Add the pasta to the cheese sauce and stir to completely mix this together
  9. Pour the mac n cheese into a baking dish and if using the topping, top with the bread crumb mixture
  10. Bake the mac n cheese for 30 minutes in a 400 degree pre-heated oven until bubbling and the top becomes golden brown
  11. Remove from oven and let sit for 5 minutes before serving
