Grandma’s Mac n Cheese
Who doesn’t love a good Mac n Cheese? This recipe is not only easy to make, I am telling you, it’s gonna make Dad and everyone else very happy!
You’ll need:
- 2 cups milk
- 2 cups of heavy cream
- 8 tbs butter
- 1/2 cup minced onion
- 1/2 cup all-purpose flour
- 2 tsp salt
- 1/4 teaspoon freshly ground black pepper
- 3 cups shredded extra sharp cheddar cheese
- 1 cup grated pecorino romano cheese
- 1 lb elbow macaroni
- 1 cup bread crumbs (topping)
- 1 tbs melted butter (topping)
- 1/2 cup romano cheese (topping)
Directions:
Topping (optional) is 1 cup of bread crumbs mixed with 1/2 cup of Romano cheese and 1 tbs of melted butter, mix this all together and set aside.
- Heat the milk and cream in a saucepan over medium heat until it begins to boil then turn off heat add the salt and cover
- In a large saucepan, melt the butter over medium heat add the minced onion
- Sauté for 2 minutes then slowly whisk in the flour adjusting heat to a very low heat for 3-5 minutes or until this turns to a light golden brown color
- Now slowly add the hot milk to the flour mixture while whisking it constantly until fully mixed together
- Return the saucepan to a medium heat and whisking constantly for 2-3 minutes until the sauce becomes thick enough to coat the back of a spoon
- Now lower the heat to low and slowly add all the cheese until the cheese is fully melted
- Prepare the pasta 2 minutes short of recommended time, strain and remove as much water as possible
- Add the pasta to the cheese sauce and stir to completely mix this together
- Pour the mac n cheese into a baking dish and if using the topping, top with the bread crumb mixture
- Bake the mac n cheese for 30 minutes in a 400 degree pre-heated oven until bubbling and the top becomes golden brown
- Remove from oven and let sit for 5 minutes before serving
