Spinach-meat-cheese Frittata

Spinach-meat-cheese FrittataThis is really simple to make and you can adjust the ingredients to use what you like. It will be enough for 6 people!
You will need:

  • 8 large eggs
  • 1/2 cup of half n half
  • 1 cup of shredded cheese, cheddar, fontina, I used Comte. 
  • 1/2 cup chopped onion
  • 4 ounces chopped capicolo, prosciutto or ham
  • 2 cups fresh baby spinach 
  • 1 tbs extra virgin olive oil
  • Salt
  • Black pepper

Directions:

  1. Heat the olive oil in a large skillet and sauté the onion and the meat for a couple minutes then add the spinach and sauté until the spinach starts to wilt, cover with a lid and remove from the heat and set aside.
  2. In a bowl beat the eggs, a pinch of salt and pepper add the half n half and mix in 3/4 cup of cheese.
  3. Pour the mixture into the skillet and continue to cook on the stove on a medium heat pulling the edges to the center with a fork allowing the egg mixture to set and partially cook. Do this for 2-3 minutes then place the skillet into pre heated 400 degree oven. Cook for 10-15 minutes then check to see if it is done. You can place a toothpick in the center to check as well.
  4. Once done remove from the oven, sprinkle the remaining cheese on top, cover tightly with a lid and let it sit off the heat for 5 minutes. You could also place it under your broiler to melt the cheese. I serve mine from the skillet but it can be removed to a plate.
