Chicken n’ Dumplings

Chicken n DumplingsThis is a perfect comfort food for a cold night. Everyone will love this recipe! What’s not to like…Chicken, Soup, Dumplings.

Soup

  • 2- qts of chicken broth
  • 2- cups carrots cut into 1″pieces
  • 1-cup celery cut into 1″ pieces
  • 1 cup onion chopped
  • 1-cup frozen peas, thawed and run under hot water
  • 1- lb boneless, skinless chicken breast
  • 1-tsp salt
  • 1-tsp pepper


Dumplings 

  • 2-cups of flour
  • 1-tbs baking powder
  • 1-tsp salt
  • 1-cup milk
  • 3-tbs butter
  • Mix the the dry ingredients together them mix in the butter and milk. Once you have the dumpling dough all mixed roll it into small balls or roll it out and cut into strips 1/2″x1-1.5″

Directions:

  1. In a large pot add the chicken stock and bring this to a rapid boil.
  2. Add the chicken and be sure it is covered by the broth. Place a tight lid on the pot and turn off the heat do not uncover the pot.
  3. After 15 minutes turn the heat back to high for 1 minute and turn it off again, do not uncover the pot.
  4. After 15 more minutes check the chicken with a thermometer, we are looking for 170 degrees. Once the chicken is 170 degrees remove it to a cutting board to cool down and then shred it. 
  5. Add the carrots, celery and onion to the pot with the broth and turn the heat to medium. After 15 minutes add the chicken back to the pot.
  6. Add the peas and stir into the soup.
  7. Now it’s time to add the dumplings. Add the dumplings to a slowly boiling soup, slowly and do not stir them. Using a wooden spoon slowly move them around so they cook evenly and do not clump together. Once all the dumplings are in the soup cover the pot lower the heat to simmer and do not uncover for 15-20 minutes. This will allow the dumplings to steam in the soup.
  8. Remove the lid and try a dumpling to be sure they are done.
