Baked Rigatoni
A dish everyone will love for the Holiday Dinner!
The perfect start to your Holiday Dinner or serve as a main course. Or if you haven’t decided what for dinner tonight, give it a try.
You will need:
- lb of rigatoni cooked 1/2 way of the recommended time, they will finish cooking in the oven.
- 1-lb of ricotta drained. Put it in a strainer over a bowl and let it sit for an hour in the fridge to drain the liquid.
- 1-lb of mozzarella. Shred 3/4 lb and cut 1/4 into slices
- 1/2 cup of pecorino Romano cheese and extra for the top
- 5 cups of tomato sauce.
- 2- large eggs
Directions:
- Heat the oven to 400 degrees.
- In a large bowl whisk the eggs then add 3/4 lb shredded mozzarella, all the ricotta and 1/2 cup romano cheese, 4 cups of sauce and mix this all together.
- Add the cooked rigatoni and mix completely.
- In a 9″x13″ baking dish add the rigatoni.
- Layer the rest of the mozzarella on top along with the balance of the sauce, sprinkle some romano cheese and place in the oven.
- Bake covered for 30-45 minutes or until you see the sides bubbling.
- Uncover and bake another 10 minutes to brown the top.
- Let this rest for 10 minutes before serving.
