Easy Stir Fry
- 2 lbs Boneless chicken thighs or breasts cut into bite size pieces and dried with paper towel.
- A couple bunches Baby bok choy
- As much as you like…Fresh string beans cleaned
- 1 large onion sliced
- 1/2 cup chicken broth
- 1/4 cup of soy sauce
- 4 garlic cloves smashed
- 1 tsp red pepper flakes
- 2 tbs sesame oil separated
Directions:
- In a very hot skillet large enough to hold everything or a wok add 1 tbs of the oil and once it is hot add the chicken and allow it to cook for 2-3 minutes while moving it around with a large spoon.
- Add the garlic and allow this to continue to cook for another minute moving the chicken with the garlic while it cooks.
- Now add the second tbs of sesame oil, onion and string beans and cook this still on a high heat for 2 minutes mixing everything together.
- Add the stock, soy sauce, pepper flakes and mix everything together.
- Once this comes to a brisk boil add the bok choy and still on a high heat turn the box choy into the other ingredients. I cook mine at this point for about 1 minute as I like my bok choy crispy.
- Remove a piece of chicken and cut it to be sure it is done.
- You could add corn starch to thicken…..I don’t. Serve just the way it is.
