Smashed Olive Oil Potatoes with Parsley

Smashed Olive Oil Potatoes w Parsley.Once you make your potatoes this way you may never use butter and cream again. Use a good quality extra virgin olive oil.

You will need:

  • 2 pounds red potatoes
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1/2 cup extra virgin olive oil
  • 1/2 cup fresh chopped parsley

Directions:

  1. Preheat your oven to 450 degrees.
  2. Poke some holes in the potatoes and place on a baking sheet and bake for 30-40 minutes or until done.
  3. Remove from oven and place the potatoes in a bowl.
  4. Add the salt pepper, parsley and smash with a heavy fork while slowly adding the 1/2 cup of extra virgin olive oil. I would drizzle more olive oil a little salt n pepper and add some parsley on top, then serve. I love extra virgin olive oil so I do add extra.
