Chicken with Olives and Mushrooms

Chicken with Olives and MushroomsYou will need:

  • 1-cut up chicken or the parts you like about 2 lbs.
  • 8- ounces baby bella mushrooms sliced.
  • 6-garlic cloves sliced.
  • 1/4 cup thin sliced onions
  • 1/2-cup white dry wine
  • 1/2 cup chicken stock
  • 1/2 cup green pitted olives sliced
  • Olive oil

Directions:

  1. In a large skillet put a tablespoon of oil and get it hot.
  2. Skin side down brown the chicken for about 5 minutes then flip and brown the other side.
  3. Remove the chicken and add the mushrooms, garlic, onions and olives and sauté for about 5 minutes.
  4. Add the white wine and bring to a boil and simmer for 2 minutes.
  5. Then add the chicken stock and all the chicken back to the skillet cover and simmer for about 20 minutes until the chicken is done.
