Macaroni with Broccoli di Rabe and Garlic
- 1/2 cup extra virgin olive oil + more for drizzle
- 6 garlic cloves sliced thin
- 1 head of broccoli di rabe or broccoli
- Crushed red pepper flakes
- 1 tsp salt
- 1 tsp fresh black pepper
- 1 lb of pasta
- Grated Romano cheese
Directions:
- Get a large pot of salted water boiling. Put the rabe into the boiling water for 3-5 minutes. Remove without draining the water and place the rabe on a cutting board and chop into small pieces.
- Keep the pot of water on a brisk boil and add the pasta to cook 2 minutes under recommended time.
- In a large 13″ skillet add 1/4 cup of extra virgin olive oil and turn the heat to medium. Add a couple pinches of the red pepper flakes and 6 garlic cloves sliced. Sauté this for a couple minutes (do not let the garlic burn) then add the Rabe, salt and pepper. Continue cooking this for 2 minutes.
- Reserve 2 cups of the pasta water and strain the pasta and add the pasta to the skillet along with one cup of the pasta water. Cook this on a medium heat turning the pasta and rabe into the sauce. If need be add more pasta water.
After 2 minutes remove from heat and add about 1/4 cup of grated cheese and a good drizzle of extra virgin olive oil and mix all together. Serve immediately.
