Panini

panini1Simple delicious lunch or dinner!

You will need:

  • ciabatta bread
  • prosciutto
  • mozzarella
  • sliced tomato
  • roasted peppers
  • fresh basil
  • extra virgin olive oil
  • balsamic vinegar
  • baby arugula
  • salt n pepper

Directions:

  1. Brush the outside of the bread with the olive oil and layer the prosciutto, tomato, mozzarella, basil, roasted peppers on the bread cover with the top of the bread and put in the panini press. You can also use a grill pan with a heavy lid or even a brick covered in foil.
  2. Grill for a couple minutes then flip and grill the other side.
  3. In a bowl mix the arugula with a little olive oil, balsamic vinegar and a little salt n pepper.
  4. Add a little arugula to the sandwich once they are done.

So good.
