Macaroni with Grandma Sauce and Sausage
- 1 lb of Italian sweet sausages removed from the casing
- 1 28 ounce can of a good quality whole Italian plum
- tomato crushed by hand
- 4 cloves of garlic sliced
- 1/4 cup sliced onion
- 1 tsp of crushed red pepper flakes
- 1 tsp salt
- 5 fresh basil leaves
- 2 tbs extra virgin olive oil
- 1 lb of penne pasta or rigatoni
- if you have it a Grandma Apron
- Grandma love of food
Directions:
- Get a large pot of salted water boiling for the pasta.
- Remove the sausage meat from the casing and cut into 1″ pieces.
- In a large bowl crush the tomatoes into the juice by hand.
- In a large skillet or pot heat the olive oil over a medium heat and toss in the garlic, onion and the pepper flakes.
- Sauté this for 1 minute then add the sausage.
- Once the sausage is browned add the tomatoes with all the juice and the salt.
- Stir everything together and simmer on a low heat for 15 minutes covered.
- Uncover taste for salt, add if needed and simmer for 15 minutes longer uncovered.
- At this point add the basil leaves and stir into the sauce and turn off the heat.
- Now cook your pasta 2 minutes short of recommended time, strain and add the pasta to the sauce and put the heat on medium, fold the pasta into the sauce for the remaining 2 minutes to finish cooking the pasta.
- I would serve this with some grated pecorino Romano cheese and maybe a drizzle of extra virgin olive oil. Macaroni with tomato sauce and sausage….Grandma Style.
