Spinach Parmesan Patties

6 OUNCES SPINACH, CHOPPED FINE
4 TABLESPOONS BUTTER
1 MEDIUM ONION, CHOPPED FINE
1 CLOVE GARLIC, MINCED
2 CUPS DRY BREADCRUMBS
1/2 TEASPOON SALT
1/2 TEASPOON PEPPER
1 EGG, BEATEN
1/3 CUP PARMESAN CHEESE

OLIVE OIL FOR SAUTÉING

Heat butter, add onion and garlic and sauté until softened.
Added chopped spinach and sauté until wilted. Remove from heat and let
cool.
Combine bread, cheese, salt, and pepper and mix to combine.
Add beaten egg, mix, and then add spinach mixture and combine.
Cover and refrigerate at least an hour.

To cook, heat olive oil to cover bottom of pan. Form mixture into patties
and fry for about 3 minutes on each side.

Delicious! Especially when spinach from your garden is used.
