Spinach Frittata
A Frittata can be made pretty much with any vegetable and or cheese you would like to use. I love making mine into a sandwich.
Ingredients:
- 1/4 cup chopped onion
- 2 cups fresh baby spinach
- 3 eggs
- 1 tablespoon of grated Romano cheese
- 1 tablespoon milk, half n half or heavy cream
- 1 tablespoon of extra virgin olive oil
- Salt and pepper to taste
Directions:
- Pre-heat the oven to 400 degrees.
- In a bowl scramble the eggs with the milk, cheese, salt n pepper.
- In a ovenproof non stick pan heat the olive oil stovetop and once hot add the onion and spinach.
- Sauté until the spinach is wilted this will take 2 minutes.
- Add the egg mixture and mix everything together.
- Remove from the stove and place the skillet into the preheated oven and bake for about 15 minutes, until frittata is puffy and golden brown.
- Using an oven mitt remove the pan from the oven and serve. You can also slide it out onto a serving plate or make a sandwich like I did.
