Salmon with two sauces on the side, Mango purée and a mango salsa
I made both sauces because I found mangos on sales at Whole Foods Market and they were super ripe! Both are really good and taste completely different.
Mango salsa
- 1- Mango diced
- 2- tbs diced onion
- 1-tbs fresh lime juice
- Pinch of salt n pepper
- 1/4 tsp sugar
- If you like heat you can add some diced chili
- Place in the fridge for 1 hour
Mango purée
- 1- mango
- 1-tsp honey
- 1-tbs apple cider vinegar
- 1 1/2 tbs Dijon mustard
- 1- tbs water
- Place this in a blender and purée.
- Place in the fridge for an hour.
Salmon filet
- Pre heat your oven to 400 degrees.
- Heat a cast iron skillet and add a couple drops of olive oil.
- Dry the fish with a paper towel and rub some olive oil on both sides. Salt n pepper the fish and once the skillet is hot place the fish flesh side down. It should make a loud sizzle. Don’t touch it for 2 minutes then flip it and place the skillet in the oven.
- My fish was 1/2 lb so I cooked it in the oven for 5 minutes. Remove and plate. On the side I served roasted brussel sprouts and steamed broccoli. Simple and really good.
