Mama Mancini’s Italian Meatloaf

Dan Mancini’s Italian Inspired Meatloaf! I love meatloaf and of course I had to come up with an Italian inspired recipe. This recipe will feed 6 people.

Ingredients

Meatloaf –

  • 2-lbs of ground beef
  • 1/2-cup chopped onions
  • 4-garlic cloves, minced
  • 1/2-cup grated Parmesan cheese
  • 1/3-cup parsley, minced
  • 1/2-cup red bell pepper, chopped
  • 1/2-cup breadcrumbs
  • 2-eggs
  • 1/4-cup tomato paste

Sauce –

  • 1/3-cup tomato paste
  • 1-tbs balsamic vinegar 
  • 1-tbs brown sugar 

Directions

Preheat oven to 375 degrees.

Add the meatloaf ingredients into a bowl and mix together.

Combine the sauce ingredients in a separate bowl.

Place the combined meatloaf mixture into a loaf pan, or form into a loaf shape on a baking sheet (loaf pan preferred).

Spread the sauce on top of the meatloaf.

Place meatloaf into the preheated oven for 45 minutes to 1 hour. Internal temp must reach 165 degrees.

Remove and let rest for 10 minutes before serving.
