Shrimp Scampi with Linguini

Another really simple dish to make.

 

You’ll need:

  • 6-tbs unsalted butter
  • 4-tbs extra virgin olive oil
  • 2-shallots minced
  • 4-cloves garlic minced
  • 1 pound shrimp peeled, deveined
  • Salt and black pepper
  • 1/2-cup dry white wine
  • Juice of one fresh lemon
  • 1/4-cup chopped parsley
  • 1-lb of linguini prepared

 

Directions:

  1. Heat a skillet and add 2 tbs olive oil and 2 tbs butter and sauté the shallot at garlic for 2 minutes
  2. Season the shrimp with salt and pepper and sauté the shrimp until the are pink. Remove the shrimp to a plate.
  3. Add the wine and lemon juice and bring to a boil.
  4. Add the balance of the butter and when the butter is melted add the shrimp, prepared pasta, parsley and toss everything together.
  5. Taste for salt and pepper, adjust and serve.
