Sausage, Peppers, Onions and Potatoes

This is my recipe for this “RUSTIC” Italian comfort food all in one cast iron skillet. Simple and delicious.
Serves 6 people and is ready in 1 hour start to finish.

 

You’ll need:

  • 1-2lbs Italian sweet sausage cut into 2″ pieces
  • 2-large red onions quartered
  • 1 red, 1 yellow and 1 orange bell peppers cleaned and cut into big pieces
  • 4-Small to medium red potatoes quartered then cut in half
  • Extra virgin olive oil
  • Salt n pepper

 

Directions:

  1. Preheat the oven to 400 degrees
  2. Place the skillet on the stove on high heat
  3. Once the skillet is hot add 2-tbs oil and the potatoes, pinch of salt and pepper
  4. With a spoon, toss the potatoes in the oil to coat and brown them for 5 minutes
  5. Add the onions, peppers and sausage, drizzle 1/4 cup of oil and season with salt n pepper
  6. Toss again with the spoon to coat everything with the oil
  7. Using oven proof mitts place the skillet in the oven
  8. After 15 minutes, toss everything
  9. At 30 minutes, check to see if the sausage is done
  10. Once the sausage is done remove the skillet and let rest for minutes.
  11. Toss and serve

 

A crusty Italian bread is all that’s needed for this dish.
