The Wedge Salad

the wedgeSo you are out at a steakhouse and you order “The Wedge”, Iceberg lettuce and blue cheese dressing $8.95–$15.00! I love a good green salad but “The Wedge” oh so good. And we an make this at home for a fraction of the price of a Steakhouse. The Wedge goes with everything or enjoy it by itself. Make a platter of them fully dressed and watch your guests go nuts….for “The Wedge”.

You’ll need:

For four wedge salads:

  • 1 head of Iceberg lettuce
  • 1/2 lb of thick bacon, cooked and crumbled
  • 1/4 lb blue cheese crumbled
  • Very ripe tomatoes, chopped

For the blue cheese dressing-enough for up to 8 wedges:

  • 1 cup mayo
  • 1/2 cup crumbled blue cheese
  • 1/4 cup heavy cream
  • 1/4 cup sour cream
  • 1 tbs fresh lemon juice
  • 1 tsp worcestershire sauce
  • 1 tsp of red wine vinegar
  • 1/2 tsp Fresh black pepper
  • 1/2 tsp kosher salt

Directions:

  1. In a bowl combine all the blue cheese ingredients mix well cover with plastic wrap and let sit in the fridge for at least 4 hours.
  2. Assemble the wedges: Cut the iceberg into quarters and remove the hard part of the core.
  3. Put a little dressing in the center of each of 4 plates and place the wedge on top of the dressing.
  4. Dress each wedge with blue cheese dressing, crumbled blue cheese, chopped tomatoes, crumbled bacon, a little cracked pepper and you have “The Wedge”.

You can be very creative with “The Wedge” and add pretty much anything you love.
