Fried Zucchini
Fried Zucchini….Yes, Fried Zucchini Grandma Style.
You’ll Need:
- Green zucchini
- Olive oil
- Salt
- Pepper
- Flour
Directions:
- I use a mandolin slicer to slice the zucchini thin. You can hand slice them but you just need to be sure to slice them thin.
- Sprinkle some salt on both sides of the zucchini slices and layer them between sheets of paper towel to allow some of the moisture to come out.
- Take a skillet and put about 1/2 inch of olive oil and bring this to 350-360 degrees.
- Take the zucchini slices and put them in a large bowl with flour and toss and coat. Before frying the zucchini make sure to shake off all the excess flour.
- Carefully lay the zucchini into the hot oil and fry until golden brown on both sides. This will happen quickly.
- Remove and place on paper towel to drain. Add more to the hot oil and repeat until all the zucchini are fried.
- Sprinkle with some sea salt and black pepper and serve. You can also sprinkle a little grated Romano cheese on them but I love’m just with a little salt and pepper and some chopped parsley.
