Fried Zucchini

Fried Zucchini….Yes, Fried Zucchini Grandma Style.

You’ll Need:

  • Green zucchini
  • Olive oil
  • Salt
  • Pepper
  • Flour

Directions:

  1. I use a mandolin slicer to slice the zucchini thin. You can hand slice them but you just need to be sure to slice them thin.
  2. Sprinkle some salt on both sides of the zucchini slices and layer them between sheets of paper towel to allow some of the moisture to come out.
  3. Take a skillet and put about 1/2 inch of olive oil and bring this to 350-360 degrees.
  4. Take the zucchini slices and put them in a large bowl with flour and toss and coat. Before frying the zucchini make sure to shake off all the excess flour.
  5. Carefully lay the zucchini into the hot oil and fry until golden brown on both sides. This will happen quickly.
  6. Remove and place on paper towel to drain. Add more to the hot oil and repeat until all the zucchini are fried.
  7. Sprinkle with some sea salt and black pepper and serve. You can also sprinkle a little grated Romano cheese on them but I love’m just with a little salt and pepper and some chopped parsley.
