Orecchiette with Sausage and Radicchio

I think we all look at radicchio in the market and say “what can I do with that?” I know I do. Well this is a recipe that radicchio adds a nice flavor and finish too.

You’ll need:

  • 1-lb of orecchiette pasta
  • Olive oil
  • 1-lb of Italian sweet sausage, meat removed from the casing.
  • 4-6 garlic cloves sliced
  • 2-cups of chopped radicchio
  • 2-cups of chicken stock
  • 1-tsp red pepper flakes
  • 1cup of pasta water
  • Salt
  • Black pepper
  • 1/4-grated pecorino Romano cheese

Directions:

  1. Cook the pasta 2-minutes short of recommended time, reserve 1-cup of pasta water
  2. In a large skillet add 2-tbs of olive and put the heat to medium.
  3. Add the garlic, red pepper flakes and the sausage
  4. Cook the sausage breaking it up with a spoon 5-minutes
  5. Add the chicken stock, bring to a boil and simmer for 10 minutes.
  6. Add the pasta, the 1-cup of pasta water and finish cooking the pasta in the sauce for 2 minutes on a medium heat.
  7. Remove from the heat, wait 1 minute and fold the grated cheese into the pasta
  8. Serve topped with the radicchio, drizzle of olive oil and more grated cheese
