Chicken Cacciatore “Hunter Rustic Style”

Chicken Cacciatore

Look at the ingredients in this dish. People shy away from Chicken Cacciatore thinking it’s hard to make. Not only is it so easy, it’s delicious. Everyone will love it. This is my simple “Grandma Style” recipe  for a legit RUSTIC style chicken cacciatore!

 

You’ll need:

  • 1 chicken cut into 8 pieces
  • 1-28 oz can whole Italian plum tomatoes
  • crushed by hand
  • 1-cup chopped onion
  • 4 garlic cloves smashed
  • 1-cup chicken stock
  • 1/2 cup dry red wine
  • 1- red bell pepper chopped thick
  • 4-oz baby bella mushrooms sliced thick
  • 2-bay leaves
  • Salt n pepper
  • 1-tsp dry oregano
  • 2-tbs olive oil

 

Directions:

  1. Heat the oil in a skillet then brown the (salted and peppered) chicken 2 minutes per side, remove to a plate.

  2. In the skillet add the onion, garlic, peppers, mushrooms and sauté for 5 minutes.

  3. Add the tomatoes, stock, wine, bay leaves and oregano and heat till it begins to boil, stir it a couple times.

  4. Add the chicken back to the skillet. Lower the heat to a simmer and cover. Cook for 15 minutes then turn the chicken. Do this 2 more times.

  5. Remove the lid and check to be sure the chicken is done. Remove the chicken to a plate.

  6. Allow the sauce To cook 10 more minutes uncovered so it thickens.

  7. Place the chicken back into the skillet, remove the bay leaves and serve.

I served mine with quinoa but rice or pasta work really well.
