Italian Style Meatloaf

Italian Style MeatloafI love meatloaf and yes, it’s not the time of the year to use the oven but it’s worth for my recipe for a Classic Italian Style Meatloaf. You can make and have this for dinner tonight and have leftovers for amazing sandwiches during the week. And we all love a good meatloaf sandwich!

 

You’ll need:

  • 2 tbs butter
  • 1/2 cup of minced onion
  • 1/2 cup celery minced
  • 1 Tbsp minced garlic
  • 1/4 cup carrot, minced
  • 2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 tbs Worcestershire sauce
  • 2 tbs tomato paste
  • 1 lb ground beef
  • 1 lb ground turkey
  • 1/2 cup bread crumbs
  • 1 large egg beaten
  • 1/4 cup grated romano cheese
  • 1/4 cup chopped fresh parsley leaves
  • An extra 2 tbs of tomato paste for the top of the meatloaf

 

Directions:

  1. Take the onion, garlic, carrot and celery and if you have one pulse it in a food processor until very minced
  2. If you don’t have one then just try to mince very fine with a knife
  3. Take a skillet add the butter, salt and pepper and turn the heat to high and add the minced veggi mixture
  4. Sauté this until translucent and soft about 5 minutes
  5. In a large bowl add all of the ingredients (except the extra tomato paste for the top of the meatloaf) and mix well by hand
  6. Form into a loaf and place on a baking sheet or use a meatloaf pan
  7. Spread the remaining 2 tbs of tomato paste on top
  8. Place in a 375 degree pre-heated oven until internal temperature reaches 160 degrees
  9. Allow the meatloaf to rest for 10 minutes before serving

 

I served mine with peas that I sautéed in onions, garlic and a little olive oil and a side of quinoa. Meatloaf makes incredible sandwiches the next day for work or for your child’s lunch. Bring your children into the kitchen and have them help you make this meatloaf and they will love it even more.
