Quick Sauce

Quick SauceI got a request for my recipe for my quick sauce and as always it’s my pleasure to post! This sauce will come together in just a few minutes so make sure everyone is ready to sit down for dinner because you need to serve as soon as it’s done.

 

You’ll need:

  • 1 28 ounce can of whole Italian plum tomatoes
  • 1 lb of your favorite pasta
  • Salt
  • Pepper
  • Olive oil
  • A palm full of chopped onion
  • 2 cloves of garlic sliced
  • A pinch of red pepper flakes
  • 2 basil leaves torn or sliced

 

Directions:

  1. Get a large pot of salted water to boil
  2. Remove the tomatoes from the can and rough chop them
  3. In a large skillet 12″-13″ on medium heat add 2-tbs of olive oil, the onion, garlic, red pepper flakes and a pinch of salt and pepper
  4. Once this comes to a sizzle and the onions are translucent and the garlic is golden in color add the chopped tomatoes and all the juice
  5. Stir this all together
  6. On a med heat bring this to a boil and let it go for 10 minutes, folding everything together a couple times
  7. While this is happening cook your pasta to 2 minutes short of recommended time
  8. Now remove your undercooked pasta from the water and add directly to the sauce
  9. Lower the heat to medium and fold the pasta into the sauce for the final 2 minutes of “pasta cooking”
  10. Remove from the heat top with the basil a drizzle of olive oil and some grated Romano or Parmesan cheese
  11. Serve right away from the skillet
