Daniel Mancini’s Incredible Salad
- 1-pint of each Red and Yello cherry tomatoes cut in half
- 1-Red and 1-Yello bell pepper cut into bite size pieces
- 1-Red onion cut into small slices
- 1-Cucumber cut into bite size pieces
- Fresh basil take all the leaves stack them and slice them
- 1-cup Kalamata olives cut in half
- 1/2 cup Extra virgin olive oil
- 1/4 cup Red wine vinegar
- 1 tsp salt
- 1 tsp cracked black pepper
Add everything to a bowl toss with 1/2 of the dressing. The salad is great served right after being dressed, but it is amazing the next day. Add more dressing if desired.
