Salmon with two sauces on the side, Mango purée and a mango salsa

salmon mango sauceI made both sauces because I found mangos on sales at Whole Foods Market and they were super ripe! Both are really good and taste completely different.

Mango salsa 

  • 1- Mango diced
  • 2- tbs diced onion
  • 1-tbs fresh lime juice
  • Pinch of salt n pepper
  • 1/4 tsp sugar
  • If you like heat you can add some diced chili
  • Place in the fridge for 1 hour

Mango purée

  • 1- mango
  • 1-tsp honey
  • 1-tbs apple cider vinegar
  • 1 1/2 tbs Dijon mustard
  • 1- tbs water
  • Place this in a blender and purée.
  • Place in the fridge for an hour.

Salmon filet

  1. Pre heat your oven to 400 degrees.
  2. Heat a cast iron skillet and add a couple drops of olive oil.
  3. Dry the fish with a paper towel and rub some olive oil on both sides. Salt n pepper the fish and once the skillet is hot place the fish flesh side down. It should make a loud sizzle. Don’t touch it for 2 minutes then flip it and place the skillet in the oven.
  4. My fish was 1/2 lb so I cooked it in the oven for 5 minutes. Remove and plate. On the side I served roasted brussel sprouts and steamed broccoli. Simple and really good.
