ROASTED BROCCOLI!

ROASTED BROCCOLI!If you like Broccoli, give this recipe a try and you will love Broccoli, if you don’t like Broccoli, give this recipe a try and you will like Broccoli smile emoticon
You’ll need:

  • broccoli florets or w/stems
  • extra virgin olive oil 
  • salt
  • pepper
  • 1/2 fresh lemon
  • grated Parmesan, Romano cheese or both

Directions:

  1. Pre heat your oven to 400 degrees.
  2. Make sure your broccoli is completely dry and room temperature. Toss the broccoli in a large bowl with very little oil we just want a slight coating.
  3. Spread the broccoli onto a baking sheet and sprinkle some salt n pepper on it and place it into the oven. 30 min later turn the broccoli and return to the oven.
  4. If you like it a little underdone roast for 10-15 min more. Done 30 min more. Well done 45 min more. Taste after 45 min and decide. When you have decided it’s done remove it and top with your cheese and put back into the oven on the top rack for 2 min. Remove and squeeze the lemon on and serve.

Here is another use, after you are done roasting the broccoli toss with some pasta and 1-2 cups of pasta water (depending on how much you are making) and then mix in a generous amount of your cheese. Finish with the fresh lemon and extra cracked pepper.
