Macaroni with Grandma Sauce and Sausage2I love recipes that I can read in a minute and understand it. That’s the way I love to cook.

You will need:

  • 1 lb of Italian sweet sausages removed from the casing. More if you want.
  • 1 28 ounce can of Italian plum tomatoes crushed by hand
  • 4 cloves of garlic sliced
  • 1/2 cup sliced onion
  • 1 tsp of crushed red pepper flakes
  • 1 tsp salt
  • 5 fresh basil leaves (optional)
  • 2 tbs extra virgin olive oil
  • 1 lb of penne pasta or rigatoni or your favorite cut.

Directions:

  1. Get a large pot of salted water boiling for the pasta.
  2. Remove the sausage meat from the casing and cut into 1″ pieces.
  3. In a large bowl crush the tomatoes by hand. In a large skillet heat the olive oil over a medium heat and toss in the garlic, onion and the pepper flakes. Sauté this for 1 minute then add the sausage.
  4. Once the sausage is browned add the tomatoes with all the juice and the salt. Stir everything together and simmer on a low heat for 15 minutes.
  5. Taste for salt, add if needed and simmer for 10 minutes longer uncovered. At this point add the basil leaves and stir into the sauce and turn off the heat.
  6. Now cook your pasta 2 minutes short of recommended time, strain and add the pasta to the sauce and put the heat on medium, fold the pasta into the sauce for the remaining 2 minutes to finish cooking the pasta.
  7. Top with grated pecorino romano cheese and a drizzle of extra virgin olive oil.
    I love this sauce and I make it often.
