Macaroni with Grandma Sauce and Sausage!
I love recipes that I can read in a minute and understand it. That’s the way I love to cook.
You will need:
- 1 lb of Italian sweet sausages removed from the casing. More if you want.
- 1 28 ounce can of Italian plum tomatoes crushed by hand
- 4 cloves of garlic sliced
- 1/2 cup sliced onion
- 1 tsp of crushed red pepper flakes
- 1 tsp salt
- 5 fresh basil leaves (optional)
- 2 tbs extra virgin olive oil
- 1 lb of penne pasta or rigatoni or your favorite cut.
Directions:
- Get a large pot of salted water boiling for the pasta.
- Remove the sausage meat from the casing and cut into 1″ pieces.
- In a large bowl crush the tomatoes by hand. In a large skillet heat the olive oil over a medium heat and toss in the garlic, onion and the pepper flakes. Sauté this for 1 minute then add the sausage.
- Once the sausage is browned add the tomatoes with all the juice and the salt. Stir everything together and simmer on a low heat for 15 minutes.
- Taste for salt, add if needed and simmer for 10 minutes longer uncovered. At this point add the basil leaves and stir into the sauce and turn off the heat.
- Now cook your pasta 2 minutes short of recommended time, strain and add the pasta to the sauce and put the heat on medium, fold the pasta into the sauce for the remaining 2 minutes to finish cooking the pasta.
- Top with grated pecorino romano cheese and a drizzle of extra virgin olive oil.
I love this sauce and I make it often.
