Vegetarian Pasta Dish – No Meat Fridays

This recipe comes complements from my friend Chef Steve. It’s simple to make and is perfect for anyone observing Friday without meat. Here is a kicker the ingredients came from a local market we have here and this entire dinner for 6 people cost $5.04. I am sure in your local market you would be able to find the same ingredients for under $10.00 which is still a great value.
All the ingredients are Real.

You will need

  • 2 small onions (two cups chopped)
  • 6 cloves of garlic chopped
  • 2 red bell peppers chopped
  • 1 eggplant chopped
  • 2 zucchinis chopped
  • 1 (14 ounce) can of tomatoes
  • 1 Pound of pasta cooked al dente
  • 1 Tablespoon of balsamic vinegar
  • 1 Tablespoon dried herbs (I used Italian Blend)
  • 1 cup of water

Method

  1. Sweat the onions for five minutes (covered) with a teaspoon of salt
  2. Add the garlic and the bell peppers and cook five more minutes (covered)
  3. Add the eggplant, tomatoes and the water and cook five minutes (covered)
  4. Add the zucchini and cook five minutes (covered)
  5. Remove the lid and simmer uncovered until the sauce thickens
  6. Season with salt, pepper and balsamic vinegar
  7. Add the pasta and toss
  8. Serve with grated cheese

Adding the balsamic vinegar will balance the sweetness of the other ingredients in this dish.
