Gnocchi with Authentic Alfredo Sauce

Gnocchi with Authentic Alfredo SauceThe gnocchi is from a local Italian Pasta store and for the sauce, I made Alfredo! Now there are many versions of Alfredo sauce, but authentic Alfredo sauce is simply butter and Parmesan cheese….that’s it.

You will need:

  • 1-lb Gnocchi
  • 4 tbs unsalted butter left out to come to room temp and softened
  • 1/4 cup grated Parmigiano Reggiano cheese
  • 1-tbs pasta water

Directions:

  1. Cut the soft butter into small pieces and place in a large bowl.
  2. Cook the gnocchi till done, remove and add to the bowl with the butter, grated cheese and pasta water.
  3. Toss everything together until the cheese and butter is melted and serve. This Alfredo sauce is traditionally used on Fettuccine but I was craving it on my gnocchi. It was amazing.
