Wild Mushrooms, Wildly Delicious
Many markets sell these wild mushrooms loose by the lb and they do range in price from a few dollars to $10 a lb but we are going to mix them so just take a few of the expensive ones! A lb is a lot so cut it back if this is for 2 people. This dish is great as a side dish as well as added to a chicken, beef or pork as an entree as something to add on top.
You will need:
- 1 lb assorted mushrooms, baby bella, chanterelle, portobello, shiitake whatever is available.
- 1 tbs of butter
- 1/4 cup of chopped shallot
- 1/4 cup of chopped parsley
- 1 tbs olive oil
- 1 tsp salt
- 1 tsp pepper
Directions:
- Wash and dry the mushrooms and cut the tough parts of the stems off . Larger mushrooms can be cut in half. This is simple to makes take a skillet large enough to hold all the mushrooms and add the olive oil and shallots and sauté for a couple minutes.
- Add the butter and allow it to melt then add the mushrooms, salt and pepper.
- Lower the heat and sauté until the mushrooms are tender, this will take about 10 min. Toss with the fresh parsley and serve.
