Garlic and Basil Spaghetti

Spaghetti garlic basilIf I were cooking for Christopher Columbus I guess I would use basil because he was born in Genoa Italy and lots of basil is used there. I would keep it simple because I get sea sick and would want to get out of the galley fast. So today Christopher Columbus would have spaghetti with olive oil, garlic, basil and grated romano cheese! A jug of red wine and some bread.

You will need:

  • 1 lb spaghetti
  • 6-8 cloves of garlic smashed
  • 1/2 cup extra virgin olive oil
  • Grated romano cheese
  • Fresh basil

Directions:

  1. This is simple, cook your pasta 2 minutes short of recommended time, reserve one cup of the pasta water and strain the pasta.
  2. While the pasta is cooking….in a large skillet add the olive oil and garlic and put the heat on medium. Once the oil is hot lower the heat and allow the garlic to cook for 3-5 minutes until it comes to a light golden color, don’t burn it.
  3. Now add the cooked pasta and turn the heat up to medium and slowly add the pasta water and allow the pasta to finish cooking for 2 minutes.
  4. Finish by adding the basil ( as much as you would like) and top with some grated cheese.

If you get the garlic cooking in the oil the same time you are boiling the pasta, this dish should be done in about ten minutes. Serve this with some crusty Italian bread.
